I really like to cook, and I have not been doing it enough lately. So Monday, I made this fantastic chipotle chicken and rice recipe from my friends' recipe blog.
Except that... it was SO hot! Like, on a scale of 1 to 10 (10 being it makes you sweat and maybe tear up a little), it was a 9. Or possibly an 11.
Seriously, it was hot. I had a couple of friends over, and they were very kind about eating my experiment. We consumed a lot of plain yogurt with it to try to cut the spice, but Lexie was still sweating. :)
At first, I was certain that I had followed the recipe almost exactly and couldn't figure out why it didn't work. (I always try to follow the recipe--mostly-- the first time I make something so I know how it's "supposed" to taste before I tweak it.) But, upon further inspection, I'm pretty sure I did not follow the recipe. The ingredients were right, but the amount was off, and I didn't even stop to think about it because I had someone helping me and was therefore distracted.
So whereas the recipe said "2 canned chipotle chiles in adobo," I actually put in two cans of chiles. Oops. There are like 4 chiles per can, which would explain the five-alarm feeling in this feisty dish that kind of made us all cry and down a lot of water and milk.
They both agreed that it was good (despite the fire), and I will definitely make it again-- but with 2 peppers instead of 2 cans. Yikes. Fortunately, we were able to cool off with some yummy cookies (and some more milk). Like all things I try to bake out here on the east coast, the first batch went to the cookie gods (as David observed) so the rest would turn out well. For some reason, the cookies I make here require about half the given baking time, but since this was a new recipe, I tried cooking them for 10 minutes as directed. I promptly cut it to 5 or 6 minutes on subsequent batches because I do not like rock-hard cookies, and I especially do not like blackened, rock-hard cookies.
But don't think for a minute that I am scared away from cooking. Tomorrow I am making stuffing from scratch. :) I'm going to be improvising a little bit, so we'll see how it goes. I will tell you all about My First Stuffing later. Happy Thanksgiving!

Just so you know, I vote we keep the full 2 cans. I liked it.
Wow!! No wonder it was hot, lol. That's the sort of thing that happens to me a lot, so don't worry about it. And as far as the baking goes...my oven needs about 5 extra minutes for things to be fully cooked. Maybe if you and I combine them, we'll get an oven that will meet somewhere in the middle.

Cambria, I definitely think we should combine forces. I have to say, I never had such trouble with electric ovens!
