Verdict on the Stuffing

Well... the stuffing was mediocre. Bland. Lacked pizazz. I used this recipe, and the spices smelled very good in the bowl-- but there just wasn't enough contrast. The bread overpowered the spices, and everything was too sweet and blended a little too well. Even the fennel seeds I put in kind of faded away into the blend. Sometime in the future when I try again I will:
  • definitely add some cranberries, and maybe some empire apples
  • subtract the bell pepper
  • use more paprika
  • not toast the bread as prescribed
  • use roasted almonds instead of pecans
  • add a fairly good amount of black pepper
  • add salt (which I didn't use since I figured the broth would have enough-- except then I used unsalted butter and low sodium broth. Oops.)
  • use the mushrooms as a garnish at the end instead of mixing them in-- you couldn't even taste them!
So basically I will mostly make up my own thing, unless someone has better suggestions for fixing it up. Or a good vegetarian stuffing you already like. :)

This week: Writing writing writing writing New York writing writing Cambridge writing writing... Crunch time is on, with big papers due in two weeks! But I will take a break to go check out Christmas, NY style, on Saturday. (Yes, it's a quick trip.) Then Sunday is another choir performance in Cambridge-- still loving how much this music pushes my range and exercises a different part of my brain. :)
